Patrick and Michael Evans were born and raised in Northern Michigan, both dipping their toes into the restaurant industry while working at the Traverse City restaurant Trattoria Stella. Now, after years of training and contributing to multiple Michelin Star restaurants in San Francisco, including Lord Stanley, Commonwealth and Atelier Crenn, the brothers have returned home to share their unique dishes. Catch them at these Traverse City pop-up dinners.

While in northern California, Patrick and Michael delved into the seasonality of food, mastered a range of techniques both classic and modern and developed a nose for quality ingredients. We checked in with the dynamic culinary duo to find out more about what they’re serving at the upcoming dinner events. (Note, dinner tickets are on sale now, and limited.)

What can we expect when attending a pop-up dinner hosted by Conifer?

Guests can expect a curated five-course menu composed with the best seasonal ingredients. And we always keeping simplicity in mind.

Each dinner will have a different menu. We tend to write the menus a few weeks before the event.

What is something unique about these dinner events?
What’s fun about these dinners is the experience. For us, having a conversation about what this region’s cuisine truly is and the future of it is very exciting, and this is what we try to do via our cooking. Also a lot of what we are doing in these early stages is very off the cuff; some of these dishes we have done before and some are things we want to see people’s reactions too. Overall, we just want to make people happy.
