Ingredients
- 1/2 small red cabbage
- 1/2 small green cabbage
- 3 scallions
- 1/4 bunch cilantro
- 3 carrots, peeled
- 1 ounce extra virgin olive oil
- 1 ounce red wine vinegar
- 1/2 teaspoon ground cumin
- 2 limes, juiced
- Salt to taste
Directions
Shred cabbage, chop scallions and cilantro using a chef’s knife. Julienne carrots using a julienne peeler or mandolin, and combine all ingredients in an oversized bowl for tossing. In a separate smaller bowl, combine remaining ingredients. Toss the cabbage mixture with the dressing about 20 to 30 minutes before mealtime.
