Snowstorm S’more Cookies

These cookies are a fabulous twist on s'mores, combining delicious cookies, marshmallows and chocolate. Part of the Northern Michigan New Year's Eve celebration.

Ingredients

  • 4 1/2 C. flour
  • 4 T. unsweetened cocoa
  • 2 t. baking soda
  • 11/2 t. cinnamon
  • 1 t. ground cloves
  • 1/2 t. salt
  • 11/2 C. softened butter
  • 2 C. sugar
  • 2 egg
  • 1/2 C. molasses
  • marshmallows
  • 2 C. each white chocolate and semi-sweet chocolate chips

Directions

Mix first six ingredients in bowl and set aside. Cream butter and sugar in electric mixer. Add egg and molasses and beat until blended. Stir in flour and spice mixture. Divide dough in half and refrigerate at least an hour. Preheat oven to 350°. To make the top cookie, roll out half the dough and make 10 4-inch-square cookies with star or snowflake holes cut in the centers. To make the bottom cookie, use all remaining dough to make 10 4-inch-square cookies (no cutout). Bake cookies on ungreased sheet for 6 to 7 minutes or until edges are brown. Cool 2 minutes, then remove to wire rack. At the bonfire: Melt white and semi-sweet chocolate. Toast marshmallows and then sandwich them between cookies and dip in chocolate.
