Ricotta and Spinach Ravioli with Sage and Butter Sauce

- 2 cups ricotta
- 2 eggs
- 2 tablespoons Parmigiano-Reggiano, grated
- 2 cups spinach, cooked and chopped
- salt and pepper
- 2 1/4 cups "00" flour or all-purpose flour
- 3 eggs
- salt
- 8 sage leaves
- 1/2 cup butter
