Those familiar with Mickey Mouse Clubhouse on the Disney Channel more than likely know the “Hot Diggity Dog” song. That tune and her part-Hispanic daughter were the inspirations behind chef Michelle Rodriguez’s Hot Diggity Dilla recipe. Both kid and adult approved, her hot dog quesadillas recipe makes an easy and delicious dish.
- Flour tortillas
- Fully-cooked hot dogs
- Cheese of your choice (Michelle chose cheddar)
- Coconut oil (optional)
Rub a little coconut oil in a sauté pan.
On medium high heat, toast the flour tortillas, top with cheese and sliced hot dogs.
When it’s golden brown on one side, flip and wait until the other side is golden brown.
Serve with ketchup! Tip: Add a little hot sauce to the ketchup for some extra spice!
