This sunshine-y, custardy dessert is elegant and easy—a few minutes under the broiler sets the gratin and caramelizes the clementines.
Serves 4, the recipe is easily doubled.
- 4 clementines
- 8 tablespoons light brown sugar
- Juice of 2 fresh oranges
- 4 egg yolks
- 1 1/2 cup riesling
Preheat broiler. Butter 4 wide, shallow ramekins. Peel clementines and slice horizontally. In a bowl, whisk together the brown sugar, orange juice, egg yolks and riesling. Arrange clementine rounds in the ramekins and pour over the mixture. Place ramekins on a baking sheet and broil for a few minutes until gratin is set. Serve immediately.
