A partnership of the Institute for Sustainable Living, Art & Natural Design (ISLAND) and the Black Cat Concert Series at Dhaseleer Events Barn
This three-part workshop runs from 2pm to 6pm on June 25, July 2 and July 16. Come to one, two or all three to learn about how to construct a true smokehouse for producing high quality smoked meats, fish and cheese in your own backyard. Construction and workshops are at the Dhaseleer Events Barn 15794 Paddock Road, Charlevoix. Come ready to work, then stick around for an evening concert in the barn. The cost is just $5 (concert extra).
June 25th, we’ll build the timber frame of the smokehouse from reclaimed materials. We’re using the book Meat Smoking and Smokehouse Design by Stanley, Adam & Robert Marianski as a guide and starting point. Tillers International will provide a timber frame demonstration as part of the workshop. The Black Cat Concert features Jen Sygit and Spare Change.
July 2nd, we will contintue work on the interior and siding of the smokehouse. There will be discussions on brining, salting, curing, temperatures and methods. The evening concert featured Michael Beauchamp and the Barn Roughs.
July 16th, we’ll fire up the smoker for a test run! The evening concert features Chris Bathgate.
