Cabbage Slaw

<ul> <li>1/2 small red cabbage</li> <li>1/2 small green cabbage</li> <li>3 scallions</li> <li>1/4 bunch cilantro</li> <li>3 carrots, peeled</li> <li>1 ounce extra virgin olive oil</li> <li>1 ounce red wine vinegar</li> <li>1/2 teaspoon ground cumin</li> <li>2 limes, juiced</li> <li>Salt to taste</li> </ul>

Directions
Shred cabbage, chop scallions and cilantro using a chef’s knife. Julienne carrots using a julienne peeler or mandolin, and combine all ingredients in an oversized bowl for tossing. In a separate smaller bowl, combine remaining ingredients. Toss the cabbage mixture with the dressing about 20 to 30 minutes before mealtime.
