Whitefish Cakes


  • 3/4 pound smoked whitefish fillets
  • 1 cup fresh breadcrumbs from a loaf of pepper Parmesan bread (or your favorite loaf)
  • 2 eggs
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped green onions
  • 1 tablespoon flour
  • 1/4 teaspoon sea salt
  • 2–3 tablespoons olive oil


Combine all ingredients except olive oil in food processor. Pulse until fish is coarse. Shape into half dollar–size patties and fry in olive oil in a heavy skillet. Makes approximately a dozen small whitefish cakes. Wine pairing: Unoaked Chardonnay
