Smoked Pork Loin with Peach Preserves, Roasted Yellow Peppers and Cream Cheese on Crackers


  • 2 dozen quality crackers
  • 1/2 cup cream cheese
  • 1/2 pound maple-cured and hickory smoked pork loin
  • 1/2 cup peach jam
  • 1 8-ounce jar roasted yellow peppers
  • 1/4 cup chopped scallions


Spread crackers with cream cheese, then top with a small slice of pork, dollop of jam and slice of roasted yellow pepper. Garnish with a chopped scallion.
