Marinated Skirt Steak

Yield: Serves 8


  • 1 skirt steak, trimmed (around 4 pounds or two full skirts)
  • 1/2 cup red onion, thinly sliced
  • 1/3 cup hot pepper (i.e., red jalapenos) seeded and sliced
  • 1/2 cup cilantro leaves, chopped
  • 1 teaspoon black pepper
  • 2 ounces fish sauce (Three Crabs Brand)
  • 3 ounces fresh-squeezed lime juice
  • 3 ounces extra-virgin olive oil
  • 2 garlic cloves minced


Combine all ingredients to make the marinade. Marinate skirt steak overnight. Once the grill is 400 degrees, grill for 7 min. on each side and until the inside temperature is 130 degrees. Remove from grill and allow to rest covered for 5 min. Then slice across the meat's grain. Serve with warm tortillas—flour or corn.
