Ingredients
- 1 skirt steak, trimmed (around 4 pounds or two full skirts)
- 1/2 cup red onion, thinly sliced
- 1/3 cup hot pepper (i.e., red jalapenos) seeded and sliced
- 1/2 cup cilantro leaves, chopped
- 1 teaspoon black pepper
- 2 ounces fish sauce (Three Crabs Brand)
- 3 ounces fresh-squeezed lime juice
- 3 ounces extra-virgin olive oil
- 2 garlic cloves minced
Directions
Combine all ingredients to make the marinade. Marinate skirt steak overnight. Once the grill is 400 degrees, grill for 7 min. on each side and until the inside temperature is 130 degrees. Remove from grill and allow to rest covered for 5 min. Then slice across the meat's grain. Serve with warm tortillas—flour or corn.
