Cucumber Tzatziki Dip

A simple, fresh recipe to make the most of cucumber season.


  • 2 medium cucumbers, peeled, seeded, grated
  • 2 cups plain yogurt
  • 2 tablespoons of fresh squeezed lemon juice
  • 1 1/2 tablespoons garlic, finely minced
  • 1 tablespoon red wine vinegar
  • 1 1/2 tablespoons fresh dill
  • salt and pepper to taste
  • Toasted pita or pita chips, for serving


Put all ingredients into a mixing bowl and mix well. If the sauce is too light and makes you pucker when you taste it, you may add a tablespoon or two of yogurt for more body.
