Cajun Trout Almondine

This recipe for trout from Lucy Downey at JD's Steak House in Kalkaska has a delicate crust and a nice Cajun kick. It won Best of Show at the April 2008 Taste of Trout event at the National Trout Festival.


  • trout fillets
  • half and half
  • salt and pepper
  • flour
  • Cajun seasoning
  • crushed croutons
  • crushed almonds
  • melted butter
  • fresh lemon juice


Take trout fillets and coat both sides in half and half, salt and pepper.

Take coated trout fillets and coat both sides in a mixture of flour, salt and pepper and Cajun seasoning.

Top fillet side with breading mixture: crushed croutons and crushed almonds.

Season baking pan with melted butter and lemon juice and lay trout fillets, breaded side up, on baking pan. Bake at 350°F for 30 minutes or until trout flakes easily with fork.
