This memorable evening, housed in the Pontresina that overlooks the Sturgeon River Valley, is centered around wild game. Dinner courses include a quinoa, arugula and goat cheese salad; wild leek and forest mushroom bisque; pan-seared crispy duck breast topped with a wild berry mole and basil red wine risotto; bourbon glazed carrots; and a caramel apple tarte tatin.
