Fruit Salsa and Cinnamon Chips
- 2 kiwi, peeled and diced
- 2 golden delicious apples, peeled, cored, and diced
- 8 ounces raspberries
- 1 pound strawberries
- 1 tablespoon sugar
- 1 tablespoon brown sugar
- 3 tablespoons fruit preserves
- 10 (10-inch) whole wheat tortillas
- Cooking spray, butter flavored
- 2 tablespoons cinnamon/sugar mix
- Preheat oven to 350 degrees.
- In a large bowl, mix all fruit with sugars and preserves. Cover and chill at least 15 minutes.
- Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange on a large baking sheet in a single layer. Sprinkle wedges with desired amount of cinnamon sugar and spray again with butter spray.
- Bake in preheated oven for 8–10 minutes. Repeat with any remaining tortilla wedges. Allow to cool for 15 minutes. Serve with chilled fruit mixture.
Baked Sweet Potato Sticks
- 8 sweet potatoes, sliced lengthwise into thick sticks
- 1 tablespoon olive oil
- ½ teaspoon paprika
- Preheat oven to 400 degrees. Lightly grease a baking sheet or use non-stick spray.
- In a large bowl, mix olive oil and paprika. Add potato sticks and stir by hand to coat. Place on prepared baking sheet.
- Bake 40 minutes until slightly browned.
