Northern Michigan Kid-Easy Pickled Veggies are a great way to get kids eating more fresh veggies. Refrigerate and save the jar of pickle juice when the pickles are gone. Have kids peel and slice carrots (if they are too young for knives and scrapers, just use mini carrots), trim green beans and break up chunks of cauliflower. Into the pickle jar they go—not packed too tightly. Put the lid on, pop it into the refrigerator and let the veggies marinate for a couple of days. Pull them out and enjoy. Store them in the refrigerator for up to two weeks.
