Ingredients
- 3/4 pound smoked whitefish fillets
- 1 cup fresh breadcrumbs from a loaf of pepper Parmesan bread (or your favorite loaf)
- 2 eggs
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped green onions
- 1 tablespoon flour
- 1/4 teaspoon sea salt
- 2–3 tablespoons olive oil
Directions
Combine all ingredients except olive oil in food processor. Pulse until fish is coarse. Shape into half dollar–size patties and fry in olive oil in a heavy skillet. Makes approximately a dozen small whitefish cakes.
