Watermelon, Mint and Feta Salad
A wedge of watermelon is a quenching treat for a sultry summer day. And this member of the gourd family is good for you—watermelon is high in vitamin A, vitamin C, and the antioxidant lycopene. Look for watermelons with a melon fragrance, a healthy sheen, a dull rind, dried stem and a buttery yellow underside where it touched the ground. If you must thump, the sound should be dull and hollow. The refreshing, puce-hued fruit is delightful in sorbets, salsas and salads, like this one:
Ingredients
- 1⁄2 watermelon
- 1 medium packet of feta cheese, cut into small cubes
- 1⁄2 cup fresh mint, roughly chopped
- 1⁄2 lemon, juiced
Directions
Chop the watermelon into chunks, discarding seeds, and place in a large salad bowl. Sprinkle it with the feta, then the mint. Squeeze the lemon juice over the salad, then toss and serve. Serves 2–3.
