Spring Breakfast Bundles

Ingredients

9 Bean Rows eggs 9 Bean Rows kale rabe
9 Bean Rows garlic scapes
9 Bean Rows wild leeks
9 Bean Rows asparagus
Cauliflower
Spring Hollow Farms goat cheese
Cabin Creek Farm & Bakery bacon
Wild leek infused olive oil (recipe link)

Preparation

Cook one slice bacon per egg bundle and set aside. Slice one half tablespoon leek whites per egg bundle, add one teaspoon oil to pan and cook whites for a few minutes. Slice one cup cauliflower, one cup kale rabe, one cup asparagus and add to leek whites; stir, cover and cook for two minutes, then set aside. Add one half teaspoon oil to warm pan, add two egg whites to pan and cook a few minutes, then flip over. Slice leek greens into bite size pieces, mince one tablespoon garlic scapes, mix greens and set aside. Add one half cup cooked vegetables to egg, one tablespoon goat cheese and cook for one minute then top with one tablespoon greens. Plate one long garlic scape, lay one slice of bacon on top of garlic scape, then lay egg on top. Fold sides of egg in, fold bacon over and tie with garlic scape.
