This salad is great with the Crayfish Feast!
- 2 large cucumbers, peeled and sliced thin
- 1 onion, sliced thin
- 1 red pepper cored, seeded and diced
- 1/2 cup rice vinegar
- Sea salt
- White pepper
- 4 tablespoons chopped fresh dill
Layer onions and cucumbers in a shallow serving dish. Sprinkle with chopped red pepper. Drizzle with rice vinegar. Sprinkle with salt, pepper and dill.
