Apricot Mint Salsa


6 apricots

1/4 medium sweet onion

1 tablespoon jalapeno pepper

1 tablespoon mint, chopped

1 teaspoon coarse ground pepper 1/4 teaspoon salt

1/2 tablespoon white wine vinegar 2 tablespoons honey


1. Cut the apricots in half, remove the pits and dice. Place in medium size bowl.

2 Dice onions and jalapenos and add to apricots.

3. Stir in the mint, salt, pepper, vinegar and honey and mix well.

4. Refrigerate salsa to let flavors blend.
