Crystal Crate & Cargo will host a free demo and tasting of Up North Global’s signature product, hand-rolled dolmathes or dolmas. Marty Pavlock will be on hand Saturday, June 21, from 11 a.m. to 2 p.m. with this Middle Eastern delicacy of stuffed grape leaves. Pavlock’s offerings are based on Greek recipes and are made with local foraged grape leaves, brown rice, lentils, tomatoes, fresh lemon, mint, and other spices.
Dolmas comes from the Turkish verb which means “to stuff,” and there are as many versions of dolmas as there are little towns throughout Greece, Turkey, Armenia, and the surrounding area. Pavlock offers gluten-free and vegan dolmathes, and uses grape leaves harvested from Benzie County.
“I’m using grape leaves I’ve picked in the Frankfort area for the dolmathes I’m making at Crystal Crate & Cargo,” said Pavlock. “They are much more delicate and tender than the leaves I use from California or Greece in the winter, and they’ve just come in season.”
Pavlock has been making his Old World artisan food items at the Grow Benzie Incubator Kitchen in Benzonia and selling at area farmers markets, including Elberta, Frankfort, Interlochen, and Grow Benzie. Originally from Detroit, his business was acquired from Up North Greek, who used family-inspired recipes to produce Greek specialties sold in the Traverse City area for several years.
This event will give shoppers a chance to taste Up North Global’s signature item and learn how you can make your own dolmathes at home.
