L. Mawby Cremant Classic Brut (en tirage 2009 /degorgement 2011)

Leelanau Peninsula. Appearance = Pale gold edged straw with fine mousse. Nose = Creamy citrus and biscuit with cider mill tang. Palate = High acid, palate cleansing with green apple, lime and long lemon chalky finish. Definitely aperitif wine – perfect for Gougères, or crispy fried Asian styled apps such as tiny spring rolls, & can handle Ponzu sauce, high acid Asian green sauces. Also good with crunchy fried apps containing delicate seafood protein such as crab or scallop with baked apple accents.
