Eric Fritch, chef-owner of Traverse City’s beloved Patisserie Amie, learned the art of pastry under Normandy chef Regis Bernard at the Seattle Culinary Academy and then worked in Seattle kitchens for four years before moving to his wife Amy’s hometown of Traverse City in 2001. We asked Fritch to share four of his favorite holiday pastry recipes, and he graciously obliged (our fave: the Belgian Chocolate Cookies!).
